{"id":929,"date":"2010-05-06T09:52:56","date_gmt":"2010-05-06T16:52:56","guid":{"rendered":"http:\/\/xangelle.com\/dailygrind\/?p=929"},"modified":"2010-05-05T11:26:46","modified_gmt":"2010-05-05T18:26:46","slug":"cooking-with-siah","status":"publish","type":"post","link":"https:\/\/xangelle.com\/dailygrind\/cooking-with-siah\/","title":{"rendered":"Cooking With Siah"},"content":{"rendered":"<p>Yesterday Siah and I had an &#8220;at home&#8221; day.<\/p>\n<p>There was a big important meeting at the office and while I could have gone in and taken Siah with me &#8211; I believe the stress level would have been quite high and having an active two year old racing around would have only added to any stress and really just wouldn&#8217;t have been necessary. <\/p>\n<p>So, we stayed home!<\/p>\n<p>And, we decided to cook up a storm&#8230;..well, as much of a storm as a two year old can handle.<\/p>\n<p>We made some Zucchini Oatmeal Cookies and I have to say that these cookies have NEVER failed me.  The recipe is (<em>as far as I&#8217;m concerned<\/em>) fool proof.<\/p>\n<p><center><a href=\"http:\/\/www.flickr.com\/photos\/xangelle\/4581404459\/\" title=\"Zucchini Oatmeal Cookies by Xangelle, on Flickr\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/farm5.static.flickr.com\/4006\/4581404459_11a6dd2c07.jpg?resize=500%2C333\" width=\"500\" height=\"333\" alt=\"Zucchini Oatmeal Cookies\" \/><\/a><\/center><\/p>\n<p>They are made with honey so can&#8217;t be considered truly vegan although they would be vegetarian, BUT regardless so SO delicious.<\/p>\n<p>Here is the recipe&#8230;<\/p>\n<p><u>Zucchini Oatmeal Cookies<\/u><\/p>\n<p>Pre-heat oven to 375*F<br \/>\nCook for 10-12 minutes<\/p>\n<p>\u00c2\u00bd cup \t\tButter (I use Earth Balance)<br \/>\n\u00c2\u00be cup\t\tHoney<br \/>\n1\t\t        Banana<br \/>\n2 cups\t\tFlour<br \/>\n1 tsp\t\t        Baking Soda<br \/>\n1 tsp\t\t        Cinnamon<br \/>\n\u00c2\u00bd tsp\t\tNutmeg<br \/>\n\u00c2\u00bc tsp\t\tSalt<br \/>\n1 cup\t\tGrated Zucchini<br \/>\n1 cup\t\tOatmeal<\/p>\n<p>1.\tCream the butter &#038; Honey together<br \/>\n2.\tAdd the Banana and Beat well<br \/>\n3.\tCombine Dry ingredients and add alternating with the zucchini into the mixture<br \/>\n4.\tStir in the Oatmeal<br \/>\n5.\tDrop by teaspoons onto greased cookie sheet<br \/>\n6.\tBake for 10-12 mins<\/p>\n<p>They are chewy and moist and almost muffin like.  In fact, I have just dumped the batter into muffin tins before and they are equally delicious, just bigger.<\/p>\n<p>While our cookies were baking, we decided to throw together a Hot and Sour Soup that I&#8217;ve been meaning  to try out.<\/p>\n<p><\/center><a href=\"http:\/\/www.flickr.com\/photos\/xangelle\/4581398451\/\" title=\"100_5861 by Xangelle, on Flickr\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/farm5.static.flickr.com\/4010\/4581398451_1440599064.jpg?resize=500%2C333\" width=\"500\" height=\"333\" alt=\"100_5861\" \/><\/a><\/center><\/p>\n<p>I&#8217;d link to the recipe, BUT&#8230;.i have no idea where I got the recipe from&#8230;.I was looking for crockpot soup ideas and found this one and cut and paste it into a word doc and well&#8230;..ya!<\/p>\n<p>But, here is the recipe that I used, which was slightly (<em>well, actually &#8211; significantly<\/em>) adapted from the original.<\/p>\n<p>Hot and Sour Soup<\/p>\n<p>4 cups of Chicken Broth<br \/>\n4 cups of Water<br \/>\n4 T of Soy Sauce<br \/>\n4 T of Rice Wine Vinegar<br \/>\n1 T of Sesame Oil<br \/>\n1\/2 t of Red Pepper Flakes<br \/>\n1 can drained sliced water chesnuts<br \/>\nhalf a medium zucchini<br \/>\n2 carrots<br \/>\n1 package of firm tofu cut into cubes (approx 1.5 cups)<\/p>\n<p>I&#8217;d have added green onions if I had any, but I didn&#8217;t&#8230;.so this is what we threw together.<\/p>\n<p>It simmered for a while and was AMAZING.  Siah thought it was a bit spicy, but you could reduce the pepper flakes if you didn&#8217;t want it too spicy.  If you like Hot and Sour soup, try it&#8230;.so easy.  Just throw together and let simmer&#8230;.then serve.<\/p>\n<p>We had a great time baking and cooking together.  I love spending time with my kids and I feel like involving them in the &#8220;making&#8221; process gives them buy in especially when it comes to food.<\/p>\n<p>I find that they feel a sense of ownership regarding what they&#8217;ve created and so its a great way to introduce new tastes, smells and textures.<\/p>\n<p>And even though Siah is only two, he was a great help.  He stirred the cookie batter in between additions and only once stuck the spoon to my shirt&#8230;.and he dumped all the liquids into the pot after I measured them out and then added the tofu, zucchini and carrots in for me.<\/p>\n<p>Yes, there was mess, but I find that it really wasn&#8217;t that big of a mess, took little to no effort to clean up (<em>above and beyond what I would have created in making the cookies and soup<\/em>), it&#8217;s quality time together AND&#8230;.I&#8217;m teaching him from a young age to enjoy cooking; and to cook delicious, healthy foods.<\/p>\n<p>Those things are well worth any amount of mess that the two of us might create together.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yesterday Siah and I had an &#8220;at home&#8221; day.
